Merchant Gourmet releases NEW cookbook instalment due to increased appetite for plant-based cooking.

Merchant Gourmet – the plant-based, healthy grains and pulses brand – has launched a new vegan cookbook: The Simple Plant-Based Cookbook (RRP £16.99) on Amazon.

The brand has a simple dream, to help save the planet one meal at a time, by making plant-based food that tastes incredible.

In this sequel to its first cookbook, Merchant Gourmet will be sharing a wealth of simple, plant-based recipes perfect for any occasion, using its ready-to-eat pulses, grains and chestnut products.

All the recipes are deliciously plant-based and are designed to make it easy for anyone adhering to a vegan diet, or simply cutting down their meat consumption, rustling up tasty meals in minutes without the fuss.

Cooking plant-based can seem intimidating, but the recipes in the new cookbook are easy to follow, use simple ingredients, and most importantly are healthy and flavoursome.

The recipes span from 30-minute meals and one-pot wonders, to mouth-watering mains and luxurious plant-based puddings. A selection of the recipes include:

There will also be a limited-edition run of covers for the cookbook, in which the cover itself can be planted at home. The recycled paper from the limited range of cover contains seeds for herbs such as basil, parsley and oregano. This plant at home cover will be available to win through a social competition launching later this month on the brand’s own channels.

Merchant Gourmet believes that eating food should not only be nourishing, but better for the planet – and should never be at the cost of time or taste.

Many of the recipes include lentils and grains that are a good source of protein, making the dishes perfect for those cutting down their meat consumption and looking to get their protein from plant-based sources.

Using the brand’s pre-cooked pouches is a great way to cut down on both time and hassle. The pouches are now also fully recyclable using the brand’s new ‘Appetite for Change Recycle Scheme recycling scheme’ partnering with Enval.
