Spicy Pulled Chicken & Chipotle Rice Soup

Ingredients

  • 4 tsp chipotle paste
  • 2 chicken breast
  • ⅓ chorizo ring, sliced
  •  600ml chicken stock 
  • 1 red onion, sliced into thin strips 
  • 1 red pepper, sliced into thin strips
  • 3 garlic cloves, minced 
  • 1 pouch of Merchant Gourmet Spanish-Style Grains
  •  ½ tin sweetcorn
  •  1.5tbsp tomato paste 
  • 1 tsp smoked paprika   
  • Optional toppings:

  • Sour cream
  • Lime
  • Coriander 
  • Jalapeños 

Instructions

  1. Marinate the chicken breasts in 2 tsp of chipotle paste. On medium heat, sear the chicken in a deep pot for 2 minutes on each side.
  2. Remove the chicken and set aside. Add the onion and peppers to the same pot and cook for 6 minutes.
  3. Add the chorizo and garlic, and cook for 3 more minutes.
  4. Stir in the remaining chipotle paste, smoked paprika, and tomato paste, and cook for 2 minutes.
  5. Add the stock, sweetcorn, and chicken back into the pot. Simmer for 10 minutes.
  6. Remove the chicken, shred it, and add the Spanish-style grains to the pot.
  7. Serve the soup with pulled chicken and any toppings.
