Ingredients
- 4 tsp chipotle paste
- 2 chicken breast
- ⅓ chorizo ring, sliced
- 600ml chicken stock
- 1 red onion, sliced into thin strips
- 1 red pepper, sliced into thin strips
- 3 garlic cloves, minced
- 1 pouch of Merchant Gourmet Spanish-Style Grains
- ½ tin sweetcorn
- 1.5tbsp tomato paste
- 1 tsp smoked paprika
- Sour cream
- Lime
- Coriander
- Jalapeños

Instructions
- Marinate the chicken breasts in 2 tsp of chipotle paste. On medium heat, sear the chicken in a deep pot for 2 minutes on each side.
- Remove the chicken and set aside. Add the onion and peppers to the same pot and cook for 6 minutes.
- Add the chorizo and garlic, and cook for 3 more minutes.
- Stir in the remaining chipotle paste, smoked paprika, and tomato paste, and cook for 2 minutes.
- Add the stock, sweetcorn, and chicken back into the pot. Simmer for 10 minutes.
- Remove the chicken, shred it, and add the Spanish-style grains to the pot.
- Serve the soup with pulled chicken and any toppings.
