Ingredients

400g chestnut mushrooms

1 pack of Merchant Gourmet Whole Chestnuts, roughly chopped

1 large onion

500ml vegetable stock

3 sprig of thyme

Truffle oil (optional)

Parmesan
Instructions
- Sauté the onion until golden, add the mushrooms and cook for ten minutes.
- Add the chestnuts, thyme and stock and simmer gently for 15 minutes.
- Allow the soup to cool slightly and then blend until smooth using a food processor or hand-held blender.
- Serve with a drizzle of oil and some Parmesan.
