Ingredients
- 1 pouch Merchant Gourmet Korean-style grains
- 1 whole cucumber
- 2 tbsp salt
- 2 spring onions
- 2 garlic cloves
- 1 tbsp sesame seeds
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp gochujang paste
- ½ tsp sugar
- Kimchi
- Fried egg (optional)

Instructions
- Slice the ends off your cucumber. Place on a chopping board guarded between two horizontal chopsticks.
- First slice the cucumber in diagonal slants, making sure your knife hits the chopsticks to stop you slicing the whole way through the cucumber. Then turn your cucumber over and slice the untouched half in vertical strokes, again making sure your knife hits the chopsticks. You should end up with a cucumber accordion.
- Pour the salt over the cucumber and rub it in to the crevices. Set aside and leave to sweat.
- Meanwhile finely slice your spring onion and garlic cloves.
- Thoroughly wash the salt off your cucumber. Put into a bowl with the spring onions, garlic, sesame seeds, vinegar, soy sauce, gochujang paste and sugar. Mix thoroughly until the cucumber is well covered in the sauce.
- Heat your Merchant Gourmet Korean-style grains according to packet instructions and serve with kimchi, your cucumber salad and a fried egg if desired.
