Roasted Sweet Potato & Spinach Black Dhal

This warming sweet potato Dhal is pure comfort food. Packed with protein-rich black lentils, a blend of spices and soft sweet potato - it's creamy, hearty and super simple to make. 

 

 

Ingredients

  • 1 onion, chopped into wedges
  • 1 sweet potato, peeled and cut into chunks
  • 1x 250g pouch of Merchant Gourmet Black Dhal
  • 1 pack of spinach
  • ½ pack mint
  •  ½ cucumber
  • ½ red onion
  • 1 small pot of coconut yoghurt
  • Flatbread, to serve

Instructions

  1. Preheat your oven to 180C. 
  2. Add the onion and sweet potato to a large baking tray, drizzle with oil and season well. Cook for 25-30 minutes until soft and golden. 
  3. Place the roasted veg in a pan with your pouch of Merchant Gourmet Black Dhal and a splash of water.
  4. Add the spinach and heat through until wilted. 
  5. Finely chop the mint, cucumber and red onion then mix with the coconut yoghurt
  6. Serve the Dhal topped with raita and flatbread on the side. Enjoy!

  • I can’t buy your product in Sainsbury’s any more because a) I can’t get hold of your recycling envelope and b) I have a tiny kitchen and can’t store loads of empty packets long enough to fill a recycling bag and c). I am very environmentally conscious and realise there’s no such thing as throwing away. Help me to recycle your pouch please or i’ll have to stop buying it. The same goes for my neighbour nextdoor!
