Ingredients

  • 100g Merchant Gourmet Red & White Quinoa
  • 100g oats
  • 2 bananas
  • 2 tbsp chia seeds
  • 2 tbsp cashew butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 80g fresh blueberries

Instructions

  1. Preheat the oven to 150C  
  2. Mix the chia seeds with 6 tbsp water and leave to thicken up for 5-10 minutes
  3. Mash the bananas in a bowl until smooth, then add the maple syrup, cashew butter and vanilla extract. Stir well
  4. Add the oats, Merchant Gourmet Quinoa and chia seed mixture to the bowl. Stir everything together
  5. Add the blueberries to the mixture, stirring carefully
  6. Line a baking tray with baking paper then pour in the breakfast bar mixture. Spreading out evenly
  7. Bake in the oven for 20-25 minutes
  8. Leave to cool for at least 15 minutes before cutting into squares and enjoying

Good to know!

These bars are a great source of protein and fibre thanks to the quinoa, oats and chia seeds, which will keep your fuelled all morning, aid digestion and keep your blood sugar levels steady. Quinoa is also packed full of iron, magnesium, copper and B6!
