Mix the chia seeds with 6 tbsp water and leave to thicken up for 5-10 minutes
Mash the bananas in a bowl until smooth, then add the maple syrup, cashew butter and vanilla extract. Stir well
Add the oats, Merchant Gourmet Quinoa and chia seed mixture to the bowl. Stir everything together
Add the blueberries to the mixture, stirring carefully
Line a baking tray with baking paper then pour in the breakfast bar mixture. Spreading out evenly
Bake in the oven for 20-25 minutes
Leave to cool for at least 15 minutes before cutting into squares and enjoying
