Harissa 5 Bean Shakshuka

A cosy weekend brunch that's perfect for hosting. One pot of our beautiful bean medley, warming spices and golden fudgy eggs.

Ingredients

  • 1 pouch Merchant Gourmet 5 Bean Medley
  • 1 onion, finely sliced
  • 2 cloves garlic, grated
  • 1 red pepper, finely sliced
  • 2 handfuls cherry tomatoes, halved
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp harissa paste
  • 4 eggs
  • Chopped parsley and/or coriander, finely chopped
  • Crusty bread, to serve

Instructions

  1. Start by prepping all of your veg.
  2. Heat a frying pan to a medium heat, add olive oil then saute the onions, garlic, pepper and cherry tomatoes until softened. Add in the smoked paprika, cumin & harissa and give it all a really good mix. Add a splash of water (approx 100ml) and let that simmer for 5 minutes. 
  3. Tip the pouch of Merchant Gourmet 5-bean medley straight into the pan and mix through for a couple of minutes. 
  4. Using the back of a spoon, make 4 dips into the mixture for each egg. Once you've cracked an egg into each dip, pop the lid on the pan and let that simmer away to cook the eggs - approx 5 minutes, depending on how done you like your eggs. 
  5. Top with the chopped fresh herbs and it's ready to serve alongside some crusty bread. Enjoy!
