Ingredients
- 1 pouch Merchant Gourmet 5 Bean Medley
- 1 onion, finely sliced
- 2 cloves garlic, grated
- 1 red pepper, finely sliced
- 2 handfuls cherry tomatoes, halved
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp harissa paste
- 4 eggs
- Chopped parsley and/or coriander, finely chopped
- Crusty bread, to serve
Instructions
- Start by prepping all of your veg.
- Heat a frying pan to a medium heat, add olive oil then saute the onions, garlic, pepper and cherry tomatoes until softened. Add in the smoked paprika, cumin & harissa and give it all a really good mix. Add a splash of water (approx 100ml) and let that simmer for 5 minutes.
- Tip the pouch of Merchant Gourmet 5-bean medley straight into the pan and mix through for a couple of minutes.
- Using the back of a spoon, make 4 dips into the mixture for each egg. Once you've cracked an egg into each dip, pop the lid on the pan and let that simmer away to cook the eggs - approx 5 minutes, depending on how done you like your eggs.
- Top with the chopped fresh herbs and it's ready to serve alongside some crusty bread. Enjoy!
