Smoky 5-Bean Chilli

This comforting chilli is super easy to make thanks to our 5-Bean Medley. Serve with brown rice, jacket potato or quinoa for a deliciously nourishing meal.

Ingredients

  • 1 pouch of Merchant Gourmet 5-Bean Medley
  • 1 onion, finely chopped
  • 2 cloves of garlic, peeled and chopped
  • 1 red chilli, finely sliced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tin of chopped tomatoes
  • 3 tbsp tomato puree 
  • Olive oil  
  • To serve:

  • 2 red chillis, deseeded and chopped
  • 3 spring onions, thinly sliced
  • Avocado, sliced
  • Fresh coriander
     

Instructions

  1. Add the onion and garlic to a large pan and cook with a splash of oil until soft. Add the chilli, rosemary, thyme and tomato puree and cook for another 5 minutes.

  2. Add the 5 Bean Medley, tomatoes and 150ml water. Season well, bring to the boil then leave to simmer for 25-30 mins until thick.

  3. Sprinkle with fresh chilli, spring onion, coriander and avocado. Serve with rice or over a jacket potato.
