Ingredients
- 1 pack of Merchant Gourmet Wholegrain Spelt
- 200g tenderstem broccoli, cut into pieces
- 200g french beans, cut into pieces
- 1 merchant gourmet spelt pouch
- ½ red onion, finely chopped
- 100g whole almonds, roasted
- 100g spinach
- Salt and pepper
- 150g tub fresh pesto
- 2 tbsp white balsamic vinegar
- 2 tbsp olive oil

Instructions
- Preheat the oven to 180 degrees. Place your almonds onto a baking tray and roast for 5 minutes, then set aside.
- Bring two saucepans to the boil over a high heat, add your broccoli in one saucepan for 4 minutes and the french beans in the other saucepan for 3 minutes. Then blanch them both in cold water and set aside.
- Open the Merchant Gourmet Spelt. You can either microwave for 45 seconds or add straight in depending on desired temperature.
- Put all the ingredients together in a large bowl and mix well. Season with salt and pepper.
- To make the dressing, add all the ingredients together and drizzle over the salad when ready to serve.
