Greens Grains and Bean Salad with Pesto Dressing

A different kind of green goddess. Fresh crunchy and flavourful, this dish combines spelt broccoli, beans, spinach, and almonds tossed in a light but zingy pesto dressing. 

Ingredients

  • 1 pack of Merchant Gourmet Wholegrain Spelt
  • 200g tenderstem broccoli, cut into pieces
  • 200g french beans, cut into pieces
  • 1 merchant gourmet spelt pouch
  • ½ red onion, finely chopped
  • 100g whole almonds, roasted
  • 100g spinach
  • Salt and pepper
  •  

    Pesto dressing:

  • 150g tub fresh pesto
  • 2 tbsp white balsamic vinegar
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 180 degrees. Place your almonds onto a baking tray and roast for 5 minutes, then set aside.
  2. Bring two saucepans to the boil over a high heat, add your broccoli in one saucepan for 4 minutes and the french beans in the other saucepan for 3 minutes. Then blanch them both in cold water and set aside.
  3. Open the Merchant Gourmet Spelt. You can either microwave for 45 seconds or add straight in depending on desired temperature.
  4. Put all the ingredients together in a large bowl and mix well. Season with salt and pepper.
  5. To make the dressing, add all the ingredients together and drizzle over the salad when ready to serve.
  6. Enjoy!
