Polly's Wild Rice Bowl with Indian Inspired Chicken

Ingredients

  • 1 pouch Merchant Gourmet Brown, Red & Wild Rice
  • 4 tbsp greek yoghurt
  • 15g coriander
  • 30g mint
  • 100g green beans
  • 1 tbsp harissa
  • 10g melted butter
  • 2 chicken breasts, diced
  • 1 tbsp cumin
  • 1 tbsp curry powder
  • 1 tsp chilli powder
  • 2 tbsp olive oil
    250g chickpeas
  • 1 cucumber 
  • 200g cherry tomatoes 
  • 1 small white onion
  • 15g parsley
  • Salt and pepper to taste
     

Instructions

  1. Rice: Heat a pouch of Merchant Gourmet Brown, Red & Wild Rice according to packet instructions. 
  2. Yoghurt: Coriander, mint, Greek yoghurt, lots of salt and pepper blended until smooth with a little water to loosen.
  3. Green beans: Cooked in salted boiling water, then covered in a harissa butter mix.
  4. Chicken: Seasoned with lots of cumin & curry powder, salt & pepper, a little bit of chilli powder and a little bit of msg (optional). Covered in olive oil then whacked on a chicken skewer and placed under the grill until cooked .
  5. Chickpeas: Seasoned with olive oil, smoked paprika, chilli powder, a little bit of cumin, salt and pepper. Covered in olive oil then baked in the air fryer until crispy.
  6. Cucumber & tomato salad: Cucumbers, tomatoes, white onions with mint and parsley - salted in advance and and then left to marinate
  7. Topped with whatever pickly bits are available. I did pickled celery and radishes then finished with a squeeze of lime, parsley, mint and chilli flakes.
