3-Bean & Lentil Chilli with Guacamole

This 3-bean & lentil chilli is packed with pulses, veg and smoky flavour. Pair with rice, fresh guac and pickled onions for a speedy, healthy meal.

Ingredients

  • 1 pouch of Merchant Gourmet 3-Bean & Lentil Chilli
  • 1 pouch of Merchant Gourmet Brown, Red & Wild Rice
  • 1 avocado
  • Pickled red onions
  • A handful of fresh coriander
  • 1 lime
  • Salt, pepper and chilli flakes

Instructions

  1. Halve and stone the avocado and scoop into a bowl. Mash with a squeeze of lime and season with salt, pepper and chilli flakes to create a chunky guacamole.
  2. Heat the Merchant Gourmet 3-Bean & Lentil Chilli and Rice as per the pack instructions. 
  3. Assemble the rice and chilli in a bowl. Top with fresh guacamole, pickled onions, fresh coriander and wedges of lime. Top with extra chilli and grated cheese, if you'd like!
