This colourful tabbouleh is fresh, filling and bursting with flavour. Packed with fibre and protein to keep you fuelled all day long.

Ingredients

  • ½ cucumber
  • 3 tomatoes
  • ½ bunch mint
  • ½ bunch dill 
  • ½ bunch coriander 
  • ½ bunch parsley 
  • ½ bunch spring onions
  • 1 cauliflower, broken into florets 
  • Olive oil
  • Salt
  • Pepper
  • 1 lemon, juiced
  • TO SERVE:

  • 1 tbsp tahini, loosened with a splash of water
  • Pomegranate seeds 
  • Toasted mixed seeds

Instructions

  1. Finely chop the cucumber, tomatoes, mint, dill, coriander, parsley and spring onions.
  2. Mix together and season well with salt, pepper, lemon juice and olive oil.
  3. Stir through a pouch of Merchant Gourmet Wholegrain Spelt. Drizzle with tahini, then top with pomegranate and toasted mix seeds.

  • This was a triumph, easily scaled up and a hit for a dinner party side dish, will be doing this again. Need to invest in a herb chopper, to make life easier!
