Ingredients
- 1 pouch Merchant Gourmet Spanish-style Grains
- 2 corns on the cob
- Sprinkle feta cheese
- 1 avocado
- 150g sour cream
- ½ lime
- Handful of coriander
- 4 sliced shallots
- 150ml red wine vinegar
- 2.5 tbsp caster sugar
- 50ml water

Instructions
- Boil the corn for 5 minutes until slightly softened and then place into an oven proof dish.
- Cook the corn under the grill on the highest setting, turning until slightly charred all over - this should take around 15 mins depending how hot your grill is.
- While this cooks, blend the ingredients for the avo crema.
- Add the pickled shallot ingredients into a jar and leave for at least 15 mintues to pickle.
- Microwave your Spanish-style grains for 2 minutes.
- Carefully cut the corn from the cob and mix with the grains and feta cheese.
- Spread the avo crema on a plate, top with the grain mid, pickled onions and some extra coriander.
