Ingredients
- 1 onion, finely chopped
- 2 cloves of garlic, peeled and chopped
- 2 tbsp tomato puree
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 x 400g tin of chopped tomatoes
- 1 tbsp maple syrup
- 1 x 5-Bean Medley pouch
- A pinch of chilli flakes
- 1 tbsp olive oil
- 2 red chillis, deseeded and chopped
- 3 spring onions, thinly sliced
- Avocado, smashed or sliced
- Fresh coriander

Heat a drizzle of olive oil in a medium pan. Once warm, add the onion, garlic and a pinch of salt and cook for 5-10 minutes until soft.

Add the spices and tomato puree and cook for another 5 minutes, before adding the chopped tomatoes, maple syrup and 5-Bean Medley.

Season well, bring to the boil then leave to simmer for 25-30 mins until thick.

Sprinkle with fresh chilli, spring onion, coriander and avocado if you'd like. Serve with rice, quinoa or jacket potato.
