Smoky 5-Bean Chilli

This comforting chilli is super easy to make thanks to our 5-Bean Medley. Serve with brown rice, jacket potato or quinoa for a deliciously nourishing meal.

Ingredients

  • 1 onion, finely chopped
  • 2 cloves of garlic, peeled and chopped
  • 2 tbsp tomato puree 
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 x 400g tin of chopped tomatoes
  • 1 tbsp maple syrup
  • 1 x 5-Bean Medley pouch
  • A pinch of chilli flakes 
  • 1 tbsp olive oil  
  • To serve:

  • 2 red chillis, deseeded and chopped
  • 3 spring onions, thinly sliced
  • Avocado, smashed or sliced
  • Fresh coriander

Instructions

  1. Heat a drizzle of olive oil in a medium pan. Once warm, add the onion, garlic and a pinch of salt and cook for 5-10 minutes until soft.

  2. Add the spices and tomato puree and cook for another 5 minutes, before adding the chopped tomatoes, maple syrup and 5-Bean Medley.

  3. Season well, bring to the boil then leave to simmer for 25-30 mins until thick.

  4. Sprinkle with fresh chilli, spring onion, coriander and avocado if you'd like. Serve with rice, quinoa or jacket potato.
