Mushroom Spelt-otto

Ingredients

  • 1 pack of Merchant Gourmet Dried Mixed Mushrooms 
  • 2 shallots
  • 1 garlic clove
  • 1 pack of mixed wild or chestnut mushrooms
  • Small glass of white wine 
  • 1 small pot of crème fraiche 
  • 1 x 250g pouch of Merchant Gourmet Spelt 
  • Small bunch of fresh parsley 
  • To serve:

  • Grated parmesan (optional)

Instructions

  1. Cover the dried mushrooms in boiling water and leave to soak.
  2. Finely chop the shallot and garlic and fry in a wide shallow pan with a knob of butter and pinch of salt. Gently saute until softened then roughly slice the mushrooms and add them to the pan. Fry gently until golden.
  3. Add the white wine and bubble until almost evaporated.
  4. Strain the soaking liquid from the dried mushrooms into a jug (making sure to leave the sediment behind).
  5. Roughly chop the soaked mushrooms and add them to the pan.
  6. Add the stock and bring to a gentle boil then simmer for 5 minutes, to reduce.
  7. Stir in the Merchant Gourmet Spelt and continue to simmer for another 10 until the Spelt starts to soak up the liquid.
  8. Stir through the Crème Fraiche, chopped fresh parsley and black pepper. Serve with grated parmesan ans enjoy!
