Ingredients

  • 1 pack Merchant Gourmet brown, red and wild rice
  • 1 baby gem lettuce
  • 1 red onion
  • 1/2 cucumber
  • Handful of small tomatoes/ 3 large tomatoes
  • 1 red pepper
  • 150g chorizo
  • 1 pack halloumi 
  • Parsley 
  • 1 lemon
  • Extra virgin olive oil 
  • Flakey salt and cracked black pepper

Instructions

  1. If using wooden skewers, start by soaking them in water to avoid burning.
  2. Prep the salad by scooping out the centre of the cucumber and dice, slice half the red onion, chop the lettuce and tomatoes. Dress with a glug of olive oil, the juice of half a lemon and a generous pinch of salt.
  3. Heat the Merchant Gourmet brown, red & wild rice according to packet instructions. Add the rice to the salad and toss well.
  4. Prep the skewers - cut the halloumi, remaining half red pepper and half red onion into chunks and slice the chorizo. Assemble, drizzle with olive oil and season with pepper.
  5. Pan-fry over a medium heat, griddle or barbecue the skewers. Use a spatula to loosen the halloumi when turning if required.
  6. Finish the salad with finely chopped parsley, a crack of black pepper and lemon wedges.
