Ingredients
- 1 pouch MG quinoa
- 1 watermelon, chopped
- 150g goats cheese
- 4 shallots
- 1 chopped beetroot
- 150ml rice wine vinegar
- 2.5 tbsp caster sugar
- 50ml water
- Juice of 1/2 lemon
- 3 tbsp olive oil
- Handful of chopped mint
- Salt and pepper

Instructions
- First, pickle the shallots. Simply combine the finely sliced shallots with the pickle ingredients in a jar and leave for at least 30 minutes.
- In a bowl, mix up the ingredients needed for the dressing.
- Combine half the dressing with the Merchant Gourmet quinoa and top with the watermelon, goats cheese and pickled shallots.
- Finish by drizzling over the rest of the dressing.
