  1. Chop up the watermelon, feta and cucumber into small bite-sized cubes and toss in a large bowl with the quinoa, until well-combined and distributed. Cover the salad with the olive oil, juice of a lime and sea salt.
  2. To finish, chop up the mint leaves and add, stirring well before serving.
