Light and refreshing yet warming and wholesome, try this sesame chicken and wild rice soup packed with fresh veggies and warming spices.

Ingredients

  • 1 pouch Merchant Gourmet Brown, Red & Wild Rice
  • 2 shallots
  • 3 cloves garlic, grated
  • 2cm ginger, grated
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp miso paste
  • 600ml chicken stock
  • Juice ½ lime 
  • Handful fresh mint
  • Handful fresh coriander
     
  • for the Chicken 

  • 4 chicken thighs
  • ½ lime 
  • 1 tbsp soy 
  • 2 tsp five spice
  • 1 tbsp sesame oil
  •  

    for the Toppings

  • Fresh herbs 
  • Lime 
  • Fresh chillies
     

Instructions

  1. Marinate the chicken for 15 minutes and fry for 12-15 minutes or until cooked through. 
  2. In another pan, fry the ginger, garlic, shallots in sesame oil on a low heat until caramelised.
  3. Then add the soy sauce, miso paste, chicken stock and lime juice along with fresh herbs and wild rice. Cook everything together for 5 minutes. 
  4. Top with pan fried chicken, chillies and herbs.
