Thai Green Curry & Coconut Rice

Ingrédients

  • 1 onion
  • 2 tbsp Thai green curry paste 
  • 1 green pepper 
  • 1 pack of sugar snap peas
  • 1 pack of Tenderstem broccoli 
  • 1 x 400ml tin coconut milk
  • A handful of fresh coriander
  • 1 x pouch of Merchant Gourmet Coconut & Lime Leaf Wholegrain Rice

Méthode

  1. Chop all vegetables into equal size chunks.
  2. Heat a large frying pan, and cook the onion with the Thai green curry paste until soft and fragrant.
  3. Add the green vegetables and coconut milk. Bring to the boil then simmer gently until the veg is just cooked.
  4. Serve with Merchant Gourmet Coconut & Lime Leaf Wholegrain Rice and top with chopped coriander.
