Ingrédients
- 1 onion
- 2 tbsp Thai green curry paste
- 1 green pepper
- 1 pack of sugar snap peas
- 1 pack of Tenderstem broccoli
- 1 x 400ml tin coconut milk
- A handful of fresh coriander
- 1 x pouch of Merchant Gourmet Coconut & Lime Leaf Wholegrain Rice
Méthode
- Chop all vegetables into equal size chunks.
- Heat a large frying pan, and cook the onion with the Thai green curry paste until soft and fragrant.
- Add the green vegetables and coconut milk. Bring to the boil then simmer gently until the veg is just cooked.
- Serve with Merchant Gourmet Coconut & Lime Leaf Wholegrain Rice and top with chopped coriander.
