Ingrédients
- 1 pack of MG Brown, Red & Wild Rice
- 1 sweet potato or squash, peeled and cut into small cubes
- 2 shallots, cut into chunks
- A handful of kale
- A handful of dried cranberries
- A handful of chopped pecans
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 garlic clove, grated
- 1 tablespoon fresh thyme leaves
- Salt and pepper

Preheat the oven to 200C. Place the sweet potatoes and shallots on the prepared baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 20 to 25 minutes, or until tender and golden.

Combine all the dressing ingredients and cook the Merchant Gourmet Brown, Red & Wild Rice as per the pack instructions.

Add the kale, roasted sweet potato, shallots, rice, cranberries, pecans, and parsley to a large bowl and toss through the dressing.

Season to taste, garnish with more parsley, and serve.
