Ingrédients
- 1 pouch of Merchant Gourmet Jumbo Chickpeas
- ½ butternut squash, diced
- ½ block of feta, diced
- 2 tbsp extra virgin olive oil
- A few sprigs of thyme

1 tbsp chopped dill
- 1 tsp Dijon mustard
- 1 tbsp red or white vinegar
- 3 tbsp extra virgin olive oil
- Salt and pepper
Salad dressing
Méthode
- Heat oven to 200C/180C fan
- Spread the squash over a large baking sheet, drizzle over the oil, add the thyme and season well, bake for 25 mins.
- Add the chickpeas, feta and cook for another 10 mins until the feta becomes soft. Allow to cool.
- Meanwhile, whisk together the dressing ingredients in a serving bowl.
- Add all the ingredients to bowl and mix everything, sprinkle with extra dill and serve.
