Chickpeas Butternut Squash & Baked Feta Salad

This warming salad is perfect for winter. Packed with protein-rich chickpeas - it's nutritious, hearty and delicious.

Ingrédients

  • 1 pouch of Merchant Gourmet Jumbo Chickpeas
  • ½ butternut squash, diced
  • ½ block of feta, diced
  • 2 tbsp extra virgin olive oil
  • A few sprigs of thyme
  • 1 tbsp chopped dill

     

  • Salad dressing

  • 1 tsp Dijon mustard
  • 1 tbsp red or white vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and pepper

Méthode

  1. Heat oven to 200C/180C fan
  2. Spread the squash over a large baking sheet, drizzle over the oil, add the thyme and season well, bake for 25 mins. 
  3. Add the chickpeas, feta and cook for another 10 mins until the feta becomes soft. Allow to cool. 
  4. Meanwhile, whisk together the dressing ingredients in a serving bowl. 
  5. Add all the ingredients to bowl and mix everything, sprinkle with extra dill and serve.
