Cajun Loaded Sweet Potato

This loaded sweet potato is pure comfort food. Pack with protein-rich lentils and top with your favourite ingredients for an easy, flavourful meal.

Ingrédients

  • 1 pouch of Cajun-Style Lentils
  • 1 medium sweet potato
  • Optional toppings:

  • Yogurt, or vegan alternative
  • Chilli flakes
  • Avocado 
  • Lime 
  • Spring onion
     

Méthode

  1. Prick holes into your sweet potato and season with a little olive oil, salt and pepper. Place on a baking tray and bake for 50-60 minutes until soft. Or blast in microwave for 8-10 minutes to speed up!

  2. Heat up your pouch Merchant Gourmet Cajun-Style Lentils as per the pack instructions.

  3. Slice your sweet potato in half then fill with the lentils.

  4. Top with chosen toppings and enjoy!
