1 pouch of Merchant Gourmet Red & White Quinoa

1 pouch of Merchant Gourmet Smoky Black Turtle Beans

A handful of spinach

Sesame seeds, toasted

1 large avocado, sliced

2 limes
-
Chilli flakes

Fresh coriander
Méthode

Heat the quinoa as per the instructions and stir through some olive oil.

Add the black beans to a pan with a dash of water. Add the spinach and stir until wilted.

To serve, add the quinoa to a bowl, then pile the black beans and avocado on top.

Squeeze lime juice over the avocado. Scatter the toasted sesame seeds, chilli flakes and lime zest over the quinoa and serve with a wedge of lime.
