Ingrédients
- 1 pouch of Merchant Gourmet Smoky Black Turtle Beans
- 1 bag of corn tortilla chips
- 1 avocado, mashed
- ½ red onion, finely diced
- 1 chilli, half finely diced, half sliced for garnish
- Juice ½ lime
- 1 cob sweetcorn
- 40g grated cheese
- Handful of pickled onions
Méthode
- In a small ovenproof dish, pour in your tortilla chips.
- Tear open the smoky black turtle beans and pour straight over the tortilla chips.
- In a separate small bowl make a guacamole by combining the avocado, red onion, diced chilli and lime juice. Once mixed, top the black beans with it.
- If you have a gas hob, char your sweetcorn by holding the cob directly to the naked flame with tongs. Once charred, slice the sweetcorn from the cob and scatter over the nachos. If you do not have an open flame, you can char the sweetcorn in a hot pan.
- Garnish with pickled onions and chopped chilli and cover with the grated cheese.
- Place under a hot grill until the cheese has melted.
- Leave to cool slightly and then tuck in!
