Ingrédients
- 1 pouch Merchant Gourmet Brown, Red & Wild Rice
- 4 tbsp greek yoghurt
- 15g coriander
- 30g mint
- 100g green beans
- 1 tbsp harissa
- 10g melted butter
- 2 chicken breasts, diced
- 1 tbsp cumin
- 1 tbsp curry powder
- 1 tsp chilli powder

2 tbsp olive oil
250g chickpeas - 1 cucumber
- 200g cherry tomatoes
- 1 small white onion
- 15g parsley

Salt and pepper to taste
Méthode
- Rice: Heat a pouch of Merchant Gourmet Brown, Red & Wild Rice according to packet instructions.
- Yoghurt: Coriander, mint, Greek yoghurt, lots of salt and pepper blended until smooth with a little water to loosen.
- Green beans: Cooked in salted boiling water, then covered in a harissa butter mix.
- Chicken: Seasoned with lots of cumin & curry powder, salt & pepper, a little bit of chilli powder and a little bit of msg (optional). Covered in olive oil then whacked on a chicken skewer and placed under the grill until cooked .
- Chickpeas: Seasoned with olive oil, smoked paprika, chilli powder, a little bit of cumin, salt and pepper. Covered in olive oil then baked in the air fryer until crispy.
- Cucumber & tomato salad: Cucumbers, tomatoes, white onions with mint and parsley - salted in advance and and then left to marinate
- Topped with whatever pickly bits are available. I did pickled celery and radishes then finished with a squeeze of lime, parsley, mint and chilli flakes.
