Griddle Greens & Puy Lentil Salad

This salad is packed full of fresh, summer ingredients and plant-based goodness. It's super simple to make and tastes even better in the sun.

Ingredients

  • 3 large courgettes
  • 1 green pepper
  • 1 pack of sprouting broccoli
  • 1 x 250g pouch of Merchant Gourmet Puy Lentils
  • 1 shallot
  • 1 small bunch of parsley
  • 1 handful of mint leaves
  • 1 handful of basil leaves
  • ½ small jar of capers
  • 1 tsp mustard
  • Red wine vinegar
  • Extra virgin olive oil

Instructions

  1. Slice the courgettes and pepper vertically into long strips, drizzle with olive oil and grill on a heated griddle pan or BBQ.
  2. Griddle the broccoli whole.
  3. Finely slice the shallots and sprinkle with red wine vinegar and a pinch of salt.
  4. In a food processor, lightly blitz the herbs and capers until roughly chopped.
  5. Add the mustard, a splash of red wine vinegar and a good glug of olive oil, blitz again (making sure not to blend too heavily).
  6. Add a splash more olive oil if it is too thick.
  7. Mix the puy lentils with the herby salsa .
  8. Layer the mixed griddled veg onto a platter and top with the lentils and finally the thinly sliced courgettes.
