Ingredients
- 100g gram flour
- ½ tsp baking powder
- 120ml dairy-free milk
- A handful frozen peas
- 2 spring onions, sliced
- 1 x 250g pouch of Merchant Gourmet Spanish-Style Grains
- 3 tbsp vegan mayonnaise
- 1 lemon
- 1 small garlic clove, crushed
- 1 tsp smoked paprika
- Olive oil
- A handful of rocket
Instructions
- Mix the flour and baking powder in a bowl with some salt and pepper.
- Slowly add the dairy-free milk and whisk until you have a thick batter (you may not need it all). Add a squeeze of lemon juice and mix well.
- Stir through the Spanish-Style Grains, peas and spring onions.
- Mix together the mayonnaise, a squeeze of lemon juice, the garlic and smoked paprika.
- In a large non-stick frying pan, heat a glug of olive oil and add 1-2 tbsp of the batter. Flatten with the back of the spoon to form your fritters. Cook for 4-5 minutes on each side until golden.
- Rest on some kitchen towel and keep warm in the oven. Repeat until you’ve made around six fritters.
- Serve with a handful of rocket, a lemon wedge and a dollop of vegan aioli.

This recipe was delicious!!! Batter was so crispy. Just added some garlic and a litttle salt to the batter.
The fritters took no time at all to make.
