Coconut & Squash Curry With Mango & Lime Rice

Ingrédients

  • 1 x 250g pouch of Merchant Gourmet Mango, Chilli & Lime Wholegrain Rice
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 butternut squash, chopped into 2cm chunks
  • 4 tbsp mild curry paste
  • 1 x 400g tin chopped tomatoes
  • 1 x 400ml tin coconut milk
  • 1 tbsp peanut butter
  • A pack of fresh coriander, to serve

Méthode

  1. Heat the olive oil in a large saucepan and fry the onion and garlic over a medium heat.
  2. Add the squash, curry paste, chopped tomatoes, coconut milk and peanut butter. Combine well and leave to simmer until thick and fragrant.
  3. Serve with Merchant Gourmet Mango, Chilli & Lime Wholegrain Rice and top with fresh coriander.
