Ingrédients
- 1 pouch of Merchant Gourmet Coconut and Lime Rice
- 1 large aubergine
- A handful of mangetout
- A handful of cashew nuts
- 2 spring onions
- Fresh chilli
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp garlic and ginger paste
- 1 tbsp cornflour
- 200ml cold water

Méthode
- Slice aubergines into half moon shapes drizzle with oil and pan fry for 5 mins on each side until cooked, then remove from pan and put to one side.
- Make the sauce by mixing all the ingredients together in a bowl (except the cornflour and cool water). In a separate jug dissolve 1 tablespoon of cornflour in 200ml of cooled water then add this to the sauce mixture.
- Turn the pan heat to high / medium and once hot pour the sauce slurry in and use a wooden spoon to stir it, it will then quickly thicken. Once thickening add the mange tout and then the aubergine and coat all in the sauce.
- Heat the Merchant Gourmet Coconut and Lime Rice as per the instructions and plate up. Serve with fresh chilli, cashew nuts and spring onion.
