Ingredients:
- 2 x 250g pouches of Korean-Style Grains
- 1 onion
- 2 garlic cloves
- 3 tsp Gochujang paste
- 1 tsp miso paste
- 3 diced potatoes
- 1 leek
- enoki mushrooms
- 350g silken tofu
Method:
- In a large pot, drizzle some oil and add your onion and garlic. Leave them to simmer.
- Once browned, add 650ml of water and your gochujang and miso paste.
- Add your diced potatoes. Leave to cook for 10 minutes.
- Add your chopped leeks.
- Once the leeks are soft, add the Korean-style grains and leave to heat for 2 minutes.
- Add your enoki mushrooms and silken tofu. Cook for 2 minutes.
- Turn off the heat. Add a dash of soy sauce and sprinkle salt to taste.
- Serve the stew and enjoy!
