One-Pot Tomato & Garlic with Mediterranean Grains

Ingredients

  • 1 x 250g pouch of Merchant Gourmet Mediterranean-Style Grains
  • 300g tomatoes
  • 3 cloves garlic
  • 1 red chilli
  • 1 onion
  • 1 red pepper
  • 1 tbsp chopped parsley
  • Salt and pepper to season
  • Optional topping:

  • 1 tbsp vegan mayo mixed with ½ tsp smoked paprika and dried oregano, 1 tsp water

Instructions

  1. Start by dicing the onion, add to a large pot with a glug of olive oil, meanwhile finely chop the chilli and garlic then add to the pot.
  2. Roughly chop the pepper and tomatoes then add to the pot. Add a splash of water (around 50ml) and allow to simmer for 5-6 minutes before adding in the Merchant Gourmet Mediterranean-Style Grains in, stir together.
  3. Season with salt and pepper, then serve up with parsley. Option to add the herby vegan mayo dressing.
