Ingredients
- 1 can of chickpeas, drained
- 1 tsp paprika
- 1 tsp garlic powder
- A handful of sultanas
- 3 tbsp yogurt
- 2 tsp curry powder
- 3 tsp mango chutney
- 1 lime
- ½ cucumber
- 1 small apple
- 1 small red onion
- 1 x 250g pouch of Merchant Gourmet Glorious Grains
- Kale, spinach or rocket leaves
- Seeds and nuts
- Olive oil
Instructions
- Preheat your oven to 180C. Coat the drained chickpeas in olive oil, garlic powder, paprika and seasoning. Place on a tray in the oven for 20 mins.
- While they're cooking, make your coronation yogurt. Mix the yogurt, curry powder, mango chutney and a squeeze of lime. You can also add your sultanas here.
- Chop your apple, red onion and cucumber into thin strips. Add your leaves to a bowl and arrange your chopped fruit and veg on top. Squeeze over a little more time.
- Once crispy, take the chickpeas out of the oven and mix into your coronation yogurt.
- Heat the Glorious Grains and combine with your salad and chickpea mixture. Top with extra sultanas, plant-based feta if you fancy and seeds or nuts.
