light, bright chopped salad with a creamy, green goddess dressing. Use our Glorious Grains to save you time and keep you fuller for longer.

Ingredients

  • Half a cucumber, diced
  • 2 spring onions, sliced
  • 2 celery sticks, chopped
  • 1 x 250g pouch of Merchant Gourmet Glorious Grains
  • A handful of mixed seeds
  • 1 avocado, sliced
  •  

    Dressing:

  • 60g yogurt
  • A handful of mixed herbs (we use parsley, tarragon and chives)
  • 1 tbsp lemon juice
  • ½ garlic clove
  • 1 tbsp olive oil
  • 1 tsp capers

Instructions

  1. Slice the cucumber in half lengthways and use a spoon to remove the fleshy center. Place the cucumber halves, celery sticks, spring onions on a board and chop until all around the same size. Tip into a bowl and add the Glorious Grains.
  2. To make the dressing, place all of the ingredients in a blender and season well.
  3. Toss the salad with the creamy dressing, then top with sliced avocado and a sprinkle of seeds.
