Ingredients
- 2 corn on cob
- 100g desiccated coconut
- 1 bunch of spring onions
- 1 x 250g pouch of Merchant Gourmet Jamaican-Style Grains & Pulses
- 1 mango
- 1 red pepper

Instructions
- Parboil or microwave the corn on the cobs as instructed.
- Heat a griddle (or BBQ) then brush the cobs with olive oil and grill, turning regularly until charred.
- In a small frying pan, toast the desiccated coconut until lightly brown (be careful as it will burn quickly!)
- Slice spring onions, dice the mango and red pepper.
- Heat the Jamaican Grains as instructed (or use cold) then mix with the spring onions, pepper, mango and a good squeeze of lime.
- Top with the coconut and serve with the corn on the cob.
