Loaded Hummus with Falafel & Mediterranean Grains

Creamy hummus loaded with Mediterranean-Style Veg & Giant Couscous and crispy falafels. Serve with fluffy pitta or flatbreads for a showstopping meze dish. 

Ingredients

  • 1 tin of chickpeas
  • 2 tbsp tahini
  • 1 clove garlic
  • 1 lemon 
  • 3 tbsp extra virgin olive oil
  • 1 pack of falafels 
  • 1 pack of fresh parsley 
  • 1 pouch of Merchant Gourmet Frozen Mediterranean-Style Veg & Giant Couscous
     

Instructions

  1. Blend the chickpeas with 1 tbsp of chickpea water, tahini, garlic and lemon. 
  2. Add the olive oil until smooth and creamy. Slowly add more water if required. 
  3. Season with salt and black pepper to taste. 
  4. Heat the Mediterranean Veg & Giant Couscous and falafel as per the instructions. 
  5. Spread the hummus on a large serving platter, then top with the cooked grains and warmed falafel. 
  6. Serve with freshly chopped parsley and lemon wedges. Enjoy!
