Ingrédients
- 1 pack of Merchant Gourmet Dried Mixed Mushrooms
- 2 shallots
- 1 garlic clove
- 1 pack of mixed wild or chestnut mushrooms
- Small glass of white wine
- 1 small pot of crème fraiche
- 1 x 250g pouch of Merchant Gourmet Spelt
- Small bunch of fresh parsley
- Grated parmesan (optional)
To serve:
Méthode
- Cover the dried mushrooms in boiling water and leave to soak.
- Finely chop the shallot and garlic and fry in a wide shallow pan with a knob of butter and pinch of salt. Gently saute until softened then roughly slice the mushrooms and add them to the pan. Fry gently until golden.
- Add the white wine and bubble until almost evaporated.
- Strain the soaking liquid from the dried mushrooms into a jug (making sure to leave the sediment behind).
- Roughly chop the soaked mushrooms and add them to the pan.
- Add the stock and bring to a gentle boil then simmer for 5 minutes, to reduce.
- Stir in the Merchant Gourmet Spelt and continue to simmer for another 10 until the Spelt starts to soak up the liquid.
- Stir through the Crème Fraiche, chopped fresh parsley and black pepper. Serve with grated parmesan ans enjoy!
