Smoky Spanish Corn Salad with Avo Crema

A zesty, smoky corn salad on a bed of creamy avocado. The perfect dish for a refreshing midweek meal or to scale up for barbecues by @bigdishenergyy.

Ingrédients

  • 1 pouch Merchant Gourmet Spanish-style Grains
  • 2 corns on the cob
  • Sprinkle feta cheese
  • Avo Crema

  • 1 avocado 
  • 150g sour cream
  • ½ lime
  • Handful of coriander
  • Pickled shallots 

  • 4 sliced shallots 
  • 150ml red wine vinegar 
  • 2.5 tbsp caster sugar 
  • 50ml water

Méthode

  1. Boil the corn for 5 minutes until slightly softened and then place into an oven proof dish. 
  2. Cook the corn under the grill on the highest setting, turning until slightly charred all over - this should take around 15 mins depending how hot your grill is. 
  3. While this cooks, blend the ingredients for the avo crema. 
  4. Add the pickled shallot ingredients into a jar and leave for at least 15 mintues to pickle. 
  5. Microwave your Spanish-style grains for 2 minutes. 
  6. Carefully cut the corn from the cob and mix with the grains and feta cheese. 
  7. Spread the avo crema on a plate, top with the grain mid, pickled onions and some extra coriander.
