Golden, seasonal leeks atop of bouncy spelt and creamy ricotta. A simple, elegant dish perfect for a light lunch or a side in a bigger feast.

Ingredients

Instructions

  1. Whip the ricotta with the lemon zest and oil till smooth and silky. Season with salt and pepper to taste. 
  2. Gently sauté the leeks until they are cooked through, soften and start to turn golden at the edges. 
  3. Heat the Merchant Gourmet pouch of Wholegrain Spelt according to packet instructions. 
  4. Spread the ricotta onto your serving plate and top with the spelt, leeks and a dollop of crispy chilli oil.
