Ingredients
- 2 large courgettes
- 1 pouch of Merchant Gourmet Frozen Mediterranean-Style Veg & Giant Couscous
- 1 slice of bread
- Handful of fresh parsley, plus extra to serve
- Flaked almonds to serve
Instructions
- Preheat the oven to 200C
- Begin by cutting the courgettes lengthways and gently scraping out some of the insides with a teaspoon. Rub the courgettes with a little olive oil, season with salt and pepper then place flesh side up on a parchment lined baking sheet.
- Next take the Mediterranean-Style Veg & Giant Couscous from the freezer and divide between the courgettes, stuffing as much in as you can. Place in the oven for 15 minutes while you crack on with the bread crumbs.
- Place the bread in a small food processor with a small handful of parsley and blitz to form a crumb. Season with salt and pepper and a little olive oil and blitz again.
- After 15 minutes take the courgettes out of the oven and scatter over the bread crumbs before placing them back in the oven for a final 15 minutes.
- When courgettes have finished cooking, take them out of the oven and place on a plate. Scatter over some chopped parsley and a handful of flaked almonds and enjoy.
