Ingredients
- 1 pouch Merchant Gourmet Red & White Quinoa
- 1 pouch Merchant Gourmet Wholegrain Brown, Red & Wild Rice
- 2 spring onions, chopped
- 1 tin chickpeas, drained
- 200g baby/cherry tomatoes, quartered
- 200g cucumber, chopped into small chunks
- 20g fresh coriander, finely chopped
- 20g fresh parsley, finely chopped
- 10g fresh dill, finely chopped
- 1 large lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Start by preparing all your chopped ingredients.
- In a large bowl, combine the quinoa and brown rice. Make sure to crumble them with your hands to get rid of any clumps.
- Add all of the remaining ingredients and mix well until everything is combined and coated in the lemony dressing.
- Season with salt and black pepper to taste.
