Ingredients
- 1 pouch of Merchant Gourmet Mexican-Style Grains
- 1 tin sweetcorn
- 4 tbsp plain flour
- 125ml plant-based milk
- 2 tsp paprika
- 2 tsp garlic powder
- 3 tbsp plant-based mayo
- 1 tbsp Sriracha
- 2 tbsp oil
- 1 courgette
- 1 lime
Instructions
- Grate the courgette into a bowl and squeeze out any excess water into the sink.
- Add the Mexican-Style Grains, sweetcorn, paprika, garlic powder, flour and seasoning until it makes a thick paste. If it's not sticking together, add a little more flour.
- Heat your oil in a non-stick pan over a medium heat. Use one tablespoon to scoop the mixture into the pan to form little patties.
- Fry on each side for 3-5 mins until golden and crisp.
- Combine the Sriracha and mayo together to create the dip.
- Serve with a wedge of fresh lime and enjoy!
