Smoky Spanish-Style Grains with Celeriac & Whipped Avocado

Ingredients

  • 1 pack of Merchant Gourmet Spanish-style Grains
  • 1 small celeriac (about 500g) 
  • 80g kale, roughly chopped
  • 6 radishes
  • ½ lemon, zest and juice
  • 2 avocados
  • 4 tbsp vegan yogurt
  • 2 garlic cloves
  • A few sprigs of thyme
  • 2 tbsp extra virgin olive oil
  • A sprinkle of chilli flakes
  • Salt and pepper

Instructions

  1. Peel the celeriac and cut into cubes, roughly 2.5cm x 2.5cm in size.
  2. Fry the celeriac cubes in a frying pan over a medium heat with 2 tbsp of olive oil and a good pinch of salt and pepper. When the celeriac is starting to colour, add a few sprigs of thyme to the pan and reduce the heat slightly, stirring occasionally to ensure the celeriac is evenly cooked, turning a golden colour on each side.
  3. When the celeriac is tender, remove the thyme sprigs and add your chopped kale and crushed garlic to the pan. Fry on a low heat, stirring occasionally until the kale starts to crisp up slightly.
  4. In the meantime, microwave your Merchant Gourmet Spanish-Style Grains as per the packet instructions. When ready, add the grains to the pan with your celeriac and kale. Turn off the heat and leave the pan to cool.
  5. Slice your radish into thin discs (I used my mandolin here, but you can just as easily use a knife). Add your radish to your grains and celeriac.
  6. Finally, to make your whipped avocado, blend the avocados with the juice of ½ a lemon, yogurt and a pinch of salt, pepper and chilli flakes.
  7. Spoon the whipped avocado onto a plate and top with your celeriac and grains mixture, another sprinkle of chilli flakes and some lemon zest. Serve and enjoy!
