Simple Spanish-Style Fritters with Vegan Aioli

These fritters can be served hot or cold, by themselves or as part of a bigger dish. Their versatility and ease make them perfect for speedy lunches or mid-week dinners.

Ingredients

  • 100g gram flour 
  • ½ tsp baking powder
  • 120ml dairy-free milk
  • A handful frozen peas
  • 2 spring onions, sliced
  • 1 x 250g pouch of Merchant Gourmet Spanish-Style Grains
  • 3 tbsp vegan mayonnaise
  • 1 lemon
  • 1 small garlic clove, crushed
  • 1 tsp smoked paprika
  • Olive oil
  • A handful of rocket

Instructions

  1. Mix the flour and baking powder in a bowl with some salt and pepper.
  2. Slowly add the dairy-free milk and whisk until you have a thick batter (you may not need it all). Add a squeeze of lemon juice and mix well.
  3. Stir through the Spanish-Style Grains, peas and spring onions.
  4. Mix together the mayonnaise, a squeeze of lemon juice, the garlic and smoked paprika.
  5. In a large non-stick frying pan, heat a glug of olive oil and add 1-2 tbsp of the batter. Flatten with the back of the spoon to form your fritters. Cook for 4-5 minutes on each side until golden.
  6. Rest on some kitchen towel and keep warm in the oven. Repeat until you’ve made around six fritters.
  7. Serve with a handful of rocket, a lemon wedge and a dollop of vegan aioli.

  • This recipe was delicious!!! Batter was so crispy. Just added some garlic and a litttle salt to the batter.
    The fritters took no time at all to make.
