A super simple 10 minute lunch, that's healthy, fresh and big on flavour. These lettuce cups can be packed with any crunchy veg that you have in the fridge making them a great way to use up any leftovers! 

Ingredients

  • 1 x 250g pouch of Merchant Gourmet Glorious Grains
  • Crunchy veg (e.g carrots, radishes, cucumbers), finely diced
  • 2 spring onions, thinly sliced
  • 1 ripe avocado, diced
  • The juice of 1 lime 
  • 2 tbsp soy sauce 
  • 1 tbsp brown sugar
  • 1 clove of garlic
  • 1 thumb-sized piece of ginger
  • 1 red chilli, plus extra slices to garnish
  • Handful of mint
  • Handful of coriander
  • Baby gem lettuce, split into cups 
  • To serve:

  • Crispy onions
  • Chopped peanuts or seeds

Instructions

  1. Add the Glorious Grains and diced veg to a large mixing bowl with the spring onions and avocado.
  2. Put the lime juice, soy sauce, brown sugar, peeled garlic and ginger, chilli and herbs into a blender and blitz until smooth. Mix into the grains and veg.
  3. Spoon the mixture into the lettuce cups and top with crispy onions, peanuts or seeds and some red chilli slices.
