Jerk Salad with Charred Corn

Feel the heat with this Jamaican-Style salad. We've paired punchy Caribbean spices with refreshing mango, pepper and lime for a perfectly balanced dish.

Ingredients

Instructions

  1. Parboil or microwave the corn on the cobs as instructed.
  2. Heat a griddle (or BBQ) then brush the cobs with olive oil and grill, turning regularly until charred.
  3. In a small frying pan, toast the desiccated coconut until lightly brown (be careful as it will burn quickly!)
  4. Slice spring onions, dice the mango and red pepper.
  5. Heat the Jamaican Grains as instructed (or use cold) then mix with the spring onions, pepper, mango and a good squeeze of lime.
  6. Top with the coconut and serve with the corn on the cob.
