Ingredients
- 1 ripe mango
- Bunch of coriander
- ¼ red cabbage
- 2 tbsp plant-based yoghurt
- Half a red chilli
- 1 tsp red wine vinegar
- 2 tbsp Dr Wills Sweet Chilli Sauce
- 2 tsp Dr Wills Sriracha
- Brioche buns
- 1 pouch of Merchant Gourmet Puy Lentils
- 100g breadcrumbs
- 1 lime
- 1 tbsp soy sauce
- 2 garlic cloves
- 6-8 tbsp water
Instructions
- To make the Puy Lentil burgers, add your pouch of puy lentils, half a green chilli, garlic cloves, soy sauce, juice of half a lime, breadcrumbs, seasoning to taste and water to a blender. Blend until it makes a thick paste, you may need to add a little more water if the mixture is too dry.
- Form into 4 equal balls, then shape into flat burger patties.
- Add to a pan with olive oil on a medium heat and fry for 5 minutes on each side until golden.
- Meanwhile, make the mango slaw by adding chopped mango, finely chopped red chilli, chopped cabbage, sriracha, juice of half a lime and yoghurt to a bowl. Mix well and season.
- Once the burgers are cooked through, add your slaw to the base of the bun, followed by your burger, a good squeeze of Dr Wills Sweet Chilli Sauce and a handful of coriander. Enjoy!
