Spelt with Pistachio Mint Pesto and Salmon

Ingredients

  • 1 pouch Merchant Gourmet Wholegrain Spelt
  • 2 fillets of salmon (substitute with torn mozarella for a veggie option)
  • Dash of white wine
  • Slices of lemon 
  • Feta
  •  

    Pesto

  • 30g mint
  • 50g basil
  • 40g parmesan cheese
  • 110g olive oil
  • 80g toasted pistachios
  • Juice of 1 small lemon 

Instructions

  1. Preheat your oven to 180 degrees. Prepare your salmon in an ovenproof dish with a splash of wine, slices of lemon and seasoning. 
  2. Roast for 15 minutes or until cooked through. 
  3. While this cooks, blend your pesto ingredients. 
  4. Warm your spelt in a pan with a splash of water for a few minutes, then add in 3 heaped tbsp of pesto and continue to heat. 
  5. Serve with your salmon, a sprinkle of chillies and feta.
