Coronation Chickpea & Grains Sandwich

Level up your lunch with this plant-powered sandwich. Packed with creamy chickpeas, Glorious Grains and fresh veggies to keep you fuller for longer.

Ingredients

  • 3 tbsp low-fat Greek yogurt
  • 1 tsp curry powder
  • 1 tsp mango chutney
  • ½ lemon, juiced
  • 1 x pouch of Merchant Gourmet Glorious Grains 
  • 1 tin of chickpeas
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 pickled red onion, or raw
  • Half a cucumber, grated
  • Handful of sultanas
  • 1 handful of coriander, roughly chopped
  • 1 small handful of mint, roughly chopped
  • 3 tbsp flaked almonds
  • Bread or wrap

Instructions

  1. Drain the chickpeas and add to a pan on a medium heat with olive oil, paprika and garlic powder. Cook for 5-10 minutes until golden.
  2. Microwave the Glorious Grains for 90 seconds and add to a bowl with the rest of your ingredients.
  3. Stir well then add in your chickpeas once cooked through.
  4. Add your Coronation mixture to bread, a wrap or onto salad for a quick easy lunch.
