Romesco-Inspired Chopped Grain Salad

Merchant Gourmet Glorious Grains and Jumbo Chickpeas are tossed with charred cavolo nero, tender broccoli, roasted red peppers and crunchy almonds in this vibrant chopped salad. Inspired by the bold flavours of romesco, it's a colourful, texture-packed dish finished with crispy paprika chickpeas and a simple balsamic dressing.

Romesco-Inspired Chopped Grain Salad
Ingredients
  • Crispy Paprika Chickpeas
  • 1 pouch Merchant Gourmet Jumbo Chickpeas
  • 1 tbsp olive oil (we love Citizens of Soil)
  • 2 tsp smoked paprika
  • Sea salt and black pepper
  • Salad
  • 150g cavolo nero
  • 1 tbsp olive oil
  • 150g Tenderstem broccoli
  • 2 roasted red peppers
  • A handful of whole almonds
  • A bunch of flat-leaf parsley
  • A handful of rocket leaves
  • 1 pouch Merchant Gourmet Glorious Grains
  • Balsamic Dressing
  • 2 tbsp extra virgin olive oil (we love Citizens of Soil)
  • 1 tbsp balsamic vinegar
  • Sea salt and black pepper

  1. Preheat the grill to high.
  2. Tear the cavolo nero into bite-sized pieces and place on a baking tray. Drizzle with 1 tbsp olive oil, season lightly and massage the oil into the leaves. Grill for 5–8 minutes until crisp around the edges.
  3. Meanwhile, place the Merchant Gourmet Jumbo Chickpeas on a baking tray. Drizzle with 1 tbsp olive oil, add the smoked paprika, season with salt and pepper, and toss to coat evenly. Grill for 8–10 minutes until golden and crisp.
  4. Steam the Tenderstem broccoli for 3–4 minutes until just tender, then set aside.
  5. Arrange the cavolo nero, broccoli and roasted red peppers on a chopping board. Roughly chop into bite-sized pieces, then add the parsley and almonds and chop again until evenly distributed.
  6. Transfer the chopped vegetables to a large bowl and add the rocket leaves.
  7. Add the Merchant Gourmet Glorious Grains straight from the pouch, followed by the crispy chickpeas, and toss gently to combine.
  8. Whisk together the olive oil, balsamic vinegar and a pinch of salt and pepper. Pour over the salad and toss until evenly coated.
  9. Divide between bowls and serve immediately.
